Directions
  1. Heat oven to 425°F.
  2. Cut vegetables into 1- to 2-inch pieces. Place in large roasting pan or on large baking sheet. (Use two baking sheets, if necessary).
  3. Drizzle vegetables with oil and toss to coat well. Spread vegetables evenly on pan, and sprinkle with generous pinch of salt and pepper.
  4. Roast for 10 minutes, then stir vegetables. Return to oven and roast until tender and golden brown, 10 to 15 more minutes. 
  5. Handy Hint: Toss in a few sprigs of fresh thyme or a generous pinch of your favorite spice (such as crushed red pepper flakes, paprika, rosemary, or herbes de Provence) to change up the flavor profile of this hearty side dish.
