Directions
- Prepare the wheat berries according to the package directions. When tender, combine with 1 tablespoon dill.
- Meanwhile, in a bowl, combine the vinegar, remaining 1 teaspoon dill, and sugar with a generous pinch of salt and pepper. Stir to dissolve sugar and salt. Add cucumber and onion, and stir to combine. Let cucumber salad stand at least 15 minutes, or up to 2 hours.
- Divide wheat berries among four bowls. Top evenly with cucumber salad and salmon.* Add 2 quarters hard-boiled egg and a dollop (about ½ tablespoon) of crème fraiche to each bowl.
*Smoked salmon is a good source of protein, B vitamins, and vitamin D. It is, however, high in sodium, so if you are watching your salt intake, flake some poached or canned salmon over your bowl instead of the smoked slices.
