Wake up to an exotic bowl of healthy-breakfast goodness

Switch up the flavors of this creamy breakfast bowl by choosing any types of tropical fruits and kefir that you prefer. If you’re sensitive to gluten, choose a brand of oats that are certified gluten-free. 

Ingredients

1 cup diced of (mango, papaya, dragonfruit, kiwi, pineapple, guava, star fruit, and banana)

Directions
  1. In a small bowl or jar, combine the kefir and oats. Stir well, cover, and refrigerate overnight. 
  2. In the morning, top with fruit, coconut chips, and cacao nibs, if using. 

 

Tip: Rolled oats soften quickly, so if you forgot to mix them in the night before, mix them in in the morning! They’ll be ready in about 10 minutes. Also, you can buy pre-toasted coconut chips, but to toast them at home, place them in a dry skillet over medium heat, shaking the pan occasionally, until golden around the edges, about 4 minutes.
