This sweet-tart white balsamic glaze pairs perfectly with savory roast chicken, hearty potatoes, and garlic.

Directions
  1. Heat the oven to 400 degrees. Coat a 9-by-13-inch baking dish with nonstick cooking spray.
  2. Cut the chicken into 8 pieces. Season with salt and black pepper and set aside while you prepare the other ingredients.
  3. In a medium bowl, combine the white balsamic vinegar, canola oil, brown sugar, and rosemary. Whisk well to blend.
  4. Arrange the chicken pieces, potatoes, shallots, and garlic in the baking dish, and pour the vinegar mixture over the top. (Use a silicone brush to distribute the glaze evenly.)
  5. Roast, spooning glaze over the top of the chicken and vegetables occasionally, until an internal thermometer registers 160 degrees in the thighs, about 40 to 50 minutes. To serve, arrange the chicken pieces and vegetables on a platter, spooning any remaining glaze over the top.
