- Heat canola oil in a large pan over medium heat. Add onion. Cook about 3 minutes, or until onion softens.
- Add beans and chili powder. Cook another 5 to 7 minutes, stirring frequently.
- Divide lettuce among four salad plates.
- On each plate, top lettuce with the onion-beans mixture and tomatoes. Add cheese, avocado, and salsa.
- Optional: Serve with whole grain tortilla chips if desired.
