- Set slow cooker to HIGH. When hot, add butter, onion, and garlic to slow cooker on high heat. Cook, stirring, 1 minute.
- Stir in rice, and cook, stirring, until fragrant, 1 minute.
- Stir in mushrooms, broth, water, and thyme. Cover and cook, on HIGH, until rice is very tender, 2 to 2.5 hours. Divide among bowls, and sprinkle with cheese, if desired, before serving.
