Directions
- Heat oven to 350°F.
- In large mixing bowl, whisk eggs with salt and black pepper. Set aside.
- Heat oil in 10-inch nonstick skillet over medium heat. Add bell pepper and onion and cook, stirring occasionally, until tender, about 8 minutes. Add spinach and herbs and stir until spinach wilts, 1-2 minutes.
- Pour eggs over the vegetables and scatter goat cheese across the top. Cook, undisturbed, until the edges are set, about 3 minutes. Transfer to the oven and bake until center is cooked through, 10 to 12 minutes. Let rest 5 minutes before cutting into 6 slices.
