  1. Soak 8 large (10" to 12") wooden skewers in water 30 minutes. Coat grill rack with cooking spray or brush with oil. Heat grill to medium. 
  2. In large bowl, toss vegetables with oil. Season with salt and black pepper.
  3. Divide vegetables among skewers, alternating each type of vegetable on each skewer. Set finished kebabs on large plate, platter, or baking sheet. 
  4. Grill 10 to 12 minutes, turning kebabs every 2 to 3 minutes. Vegetables should be tender but still crisp and have good grill marks.

Tip: Button and brown mushrooms, broccoli florets, eggplant chunks, and even garlic cloves are equally delicious on these kebabs.
