Simple to make and healthy, too, these delicious veggie skewers will be enjoyed by vegetarians and meat-eaters alike

- Soak 8 large (10" to 12") wooden skewers in water 30 minutes. Coat grill rack with cooking spray or brush with oil. Heat grill to medium.
- In large bowl, toss vegetables with oil. Season with salt and black pepper.
- Divide vegetables among skewers, alternating each type of vegetable on each skewer. Set finished kebabs on large plate, platter, or baking sheet.
- Grill 10 to 12 minutes, turning kebabs every 2 to 3 minutes. Vegetables should be tender but still crisp and have good grill marks.
Tip: Button and brown mushrooms, broccoli florets, eggplant chunks, and even garlic cloves are equally delicious on these kebabs.
