Whip up these easy eggs for a satisfying weekend brunch or light lunch

- Add oil to medium skillet set over medium-high heat. Cook garlic and onion until soft, about 4 minutes.
- Add tomatoes, and cook, stirring frequently, 5 to 7 minutes. Mash tomatoes with spatula to make a "sauce."
- Make an indent to center of tomato mixture, and add egg to center of pan. Cover and cook until set, 2 to 3 minutes. Sprinkle with fresh basil before serving with whole-wheat toast, if desired.
