Directions
- Peel and cut onion into rings. To caramelize: Sauté the onion rings in 3 teaspoons olive oil for 10 minutes on medium heat, or until they’re translucent. Then, sauté onion rings on low heat for 20 minutes, or until onions are brown but not burnt. Remove from heat and set aside.
- Set an outdoor grill (or indoor grill pan) to medium high heat. Brush mahi-mahi fillets with 1 teaspoon olive oil and season with salt and pepper.
- Place mahi-mahi fillets on the grill and cook for 5 minutes, or until the fish can lift without sticking and has distinct grill marks. Flip the fillets and cook for another 5 minutes, or until fillets are firm and evenly colored. Remove fish from grill and set aside.
- Place pineapple rings on the grill and cook for 2-3 minutes, or until the rings have grill marks. Flip and cook for 2-3 minutes, remove from grill, and set aside.
- If desired, toast burger buns and top with mahi-mahi fillets, pineapple rings, and caramelized onions.
