Directions
- Heat oil in a Dutch oven or soup pot over medium-low heat. Add onions and garlic, and sauté 3 minutes. Add bell pepper and carrot. Cook 5 minutes more, stirring occasionally.
- Add remaining ingredients (except the last two, or those for serving). Bring to a boil, stir well, and reduce heat. Simmer 35 minutes, stirring occasionally.
- Serve with brown rice and top with low-fat cheddar, if desired.
